Owner Mario Fiorani's passion for resurrecting recipes from Tuscany's past makes this the most interesting place to eat in Montalcino - that is, if you're keen on trying dishes like Carrè of Deer smothered in honey and dried figs and accompanied by a chestnut purée, or "Carabaccia", a 16th Century Florentine onion - and - bread soup. I found both to be exhilarating on the palate, with interesting blends of flavor. Fiorani runs the place with his two daughters, Alessandra in the kitchen and Marina waiting on the tables.
